Chufa Milk

Chufa milk, Horchata De Chufa, is a great substitute for cow’s milk–and all other milks, such as almond, soy, or rice milk and many others. Dairy causes problems for millions of people. According to the National Digestive Diseases Information Clearinghouse, “some 30 million to 50 million Americans are lactose intolerant, including up to 75 percent of African Americans and American Indians and 90 percent of Asian Americans.

Common symptoms include nausea, cramps, bloating, gas and diarrhea that begin about 30 minutes to two hours after eating or drinking foods containing the milk sugar lactose.” It is easy to extract chufa milk from the nuts. Our milk is great, a little sweet, and lasts fresh for days in the fridge. Or you can make milk yourself direct milk from chufa “nuts,” or even from its flour. It is an excellent and healthy paleo friendly base for ice cream, sorbet, yoghurt and more.
